Aglio is the vision of Chef Vivek Patel, a Red Seal–certified chef whose years in professional kitchens have been driven by a love of Italian cooking.

His approach is simple: start with honest ingredients and treat them with respect. Every plate is built around balance, texture and flavour, held to high standards and finished with a creative touch that keeps tradition feeling fresh.

With Aglio, Vivek brings together Italian food, warm hospitality and craft — a restaurant that feels personal, welcoming and entirely his own.
